The short version fits on one screen: there is very little, it does not last long, and none of it is for sale.

What is deleted, and when
Photographs and video sent between you are hard-deleted within 48 hours of being sent, whether or not they were opened. This is a scheduled job rather than a setting, and it cannot be turned off by either of you.
Sign-in codes and pairing codes stop working after 24 hours and are single-use.
Everything else — your messages, the questions you have answered, what you have each said yes to — is kept for as long as the two of you are linked, because a conversation you cannot re-read is not a conversation and an overlap cannot be worked out from answers that have been thrown away. The protection on those is not a timer. It is that your answers are held where the app is not permitted to read them across the pair: the only thing that ever comes back is the list you both said yes to, and there is no screen, count or ordering anywhere in the product from which one of you could work out what the other declined.
Unlinking or deleting your account removes it. Deleting ends the world for both people, because a world with one person in it is not a thing this product has.
Age estimation
At sign-up a third-party provider estimates your age from a photograph. The photograph is processed and discarded. We receive a yes or no, and we do not store the image or any identity document.
Who else sees anything
No advertisers. No data brokers. No third-party analytics. Our processors are limited to hosting, email delivery, payments and age estimation, and each receives only what it needs to do its one job.
Training
Your content is never used to train any model, ours or anyone else’s.
Your rights
Ask for a copy of what we hold, ask for it to be corrected, or ask for it to be deleted, at hello@oohla.live. Deleting ends the world for both people, because a world with one person in it is not a thing this product has.
